Rhubarb Chutney

We have two thriving rhubarb plants. They were here when we bought the house and I imagine they will be here 100 years from now. It is my goal to use more of it this year. Simmer 2/3 cup of sugar, 1 T grated fresh ginger, 1/4 cup shopped onion, 1/3 cup golden raisins, 1/4 t crushed red pepper flakes, a pinch of ground cloves and 1/4 cup red wine vinegar for 5 minutes. Add 2 pounds of chopped rhubarb and simmer until the rhubarb is tender. Cool and eat with veggies, chips, meat, anything! This is yummy!

Kiwi Salsa

I ended up with 20 kiwis in my kitchen this morning. What to do with them? I like them peeled and eaten whole, but.....
Chop up a small onion, an Anaheim pepper (be sure to take the seeds out) and six kiwis. Mix them together with 2 tablespoons fresh lemon juice, 1 teaspoon sugar, 1/2 teaspoon cumin and 1/2 teaspoon curry. Very tasty.
I ate mine with ham. Corn chips would be good. Fish would be especially good!

Vegetable Tian

What is a vegetable tian? Start with yummy fresh vegetables. (I got these through Bountiful Baskets). Slice them all up. Saute the onions and strategically place the sliced vegetables on top of the onions in your tian pan. If you do not have one a dutch oven works quite nicely. Sprinkle with thyme, salt and pepper. Bake covered at 375 for 35 minutes. Uncover and sprinkle with Parmesan cheese. Bake for 25 minutes more.  Yummy!
